pacankes hpSpring is almost here so it’s the perfect time to get festive in the kitchen by cooking with edible flowers! Including a floral touch in your creations is an effortless way to add that ‘wow’ factor–especially when entertaining. Pansies in particular are a gorgeous way to make any dish look amazing–plus they add a unique flavor and spice.

Just make sure to only eat flowers that are grown organically, without chemical pesticides!


3 eggs

1/3 cup full-fat canned coconut milk

1/2 tsp vanilla extract

1/4 cup coconut flour

1/4 tsp baking soda

1 tsp ground cinnamon

1 tbsp coconut oil

Organic pansies or other edible flowers

top with maple syrup or raw honey


  1. In a mixing bowl, whisk together the eggs, coconut milk, vanilla extract and oil
  2. In a separate bowl, mix together the remaining dry ingredients
  3. Add the dry ingredients to the bowl with the wet and stir well until smooth
  4. Heat a griddle or large cast-iron skillet over medium-low heat
  5. Add enough oil to coat the surface
  6. Lift skillet from heat and pour 1/4 of the batter in the middle. Return to heat. After about 1 minute, sprinkle with pansies. Flip the pancake and cook for another 30 seconds. Repeat with remaining batter
