HBFIT Faves: Two Hands’ Granola

There are so many healthy places to grab brunch in NYC, but one of our all time favorites is Two Hands. Two Hands is inspired by Australian culture, and the creators pride themselves on offering local, nutritious food in a welcoming, warm atmosphere. One of our go-tos is their amazing granola bowl, which has homemade granola, homemade passionfruit yogurt, and mixed berries. To say we’re obsessed would be an understatement. We spoke to Chef Frankie Cox to get the recipe for the granola, and she generously gave us the inside scoop. Make this addictive crunchy yummy goodness at home and let us know what you think!

Ingredients:

  • 2 C puffed amaranth
  • 1 tbs sesame seeds
  • 1 C pepitas
  • 1 C sunflower seeds
  • 1C almonds, roughly chopped
  • 1 C walnuts, crushed
  • 1 C pecans, crushed
  • 2 C raw buckwheat
  • 1 C cranberries, roughly chopped
  • 2 tsp cardamom
  • 2 tsp cinnamon
  • 1⁄2 tsp maldon
  • 1 C GF flour
  • 1 C coconut sugar
  • 1 C coconut oil, melted
  • 1 C maple syrup

 

Instructions:

  1. Preheat the oven to 300F. Combine all dry ingredients and mix really well
  2. Mix in the wet ingredients
  3. Scrunch up a small handful of the mixture onto a lined sheet tray
  4. Repeat with the rest of the mixture
  5. Bake for 10 minutes or until golden. Rotate the sheet tray halfway through cooking time to ensure evenly baked granola.
  6. Take the granola out of the oven and let it cool for at least 30 minutes. Then, serve with your fave yogurt and enjoy!
