‘Adios Summer’ Fiesta

 

A few weeks ago, I took a Summer salads and soups class at Haven’s Kitchen in NYC. I learned how to make this amazingly refreshing watermelon gazpacho that is perfect for any summer dinner party. The best part is that it’s super easy to make! Serve with fresh salsa and plantain chips and a round of jalapeño margaritas. Make it an #HBfit fiesta!
 


WATERMELON GAZPACHO

 

INGREDIENTS

  • 6 cups watermelon (about 3 lbs) chopped
  • 2 small cucumbers, chopped
  • 1 red onion, chopped
  • 1 jalapeno or serrano, chopped
  • ½ cup lime juice
  • 2 tbsp sherry vinegar
  • 2 tsp lime zest
  • ½ bunch basil, chiffonade
  • ½ bunch mint, chiffonade
  • ½ bunch cilantro, rough chop
  • Salt to taste

 

PREPERATION

  1. Place watermelon, cucumbers, onion, jalapeno, vinegar and lime juice in a blender
  2. Puree until smooth
  3. Pass through a mesh strainer to remove any fibers
  4. If consistency is too watery, add back in some of the fibers little by little
  5. Keep chilled and garnish with herbs, lime zest, and salt to taste
