HBFIT EATS: AVO KIWI SALSA BY ESTELLE LUBINO

As most of you know, Estelle Lubino is a source of daily inspiration for us. She is permanently making everyday moments so beautiful with her unique aesthetic and perspective. One of our favorite things to see is her recipe development. We asked her to create something delicious (and nutritious, of course), that was seasonal and summery. What she presented was something we had never heard of–avocado kiwi salsa! Her recipe is the perfect balance of sweet, savory, salty and spicy. The best part? It takes about six seconds to make. Enjoy!

Ingredients:

2-3 ripe kiwi fruit, peeled, chopped

1 large avocado peeled and chopped

1 tablespoon bell pepper seeded and thinly chopped

1 tablespoon chopped fresh cilantro

1 teaspoon olive oil

1 teaspoon lime juice

sea salt and pepper to taste

Tortilla chips

Directions:

  1. In a large bowl, combine kiwi, avocado, bell pepper, chopped cilantro and lime juice.
  2. Season to taste with additional sea salt and lime juice.
  3. Gently mix it together and serve with tortilla chips.
