Creating a sweet treat that is not too heavy can be challenging. We tapped our girl Estelle to take on the challenge to create a guilt-free dessert. She came up with beautiful roasted pears—carmalized to perfection and topped with vanilla soy yogurt (which is totally optional—you could sub for coconut ice cream!)

Roasted pears:


4 ripe but firm pears

1 tablespoon butter

2 tablespoons honey

1 tablespoon fresh lemon juice

1/4 chopped nuts to serve

1 tablespoon of muesli (optional)


1. Pre heat the oven to 375 degrees

Mix the honey, lemon juice and cinnamon in a large bowl.

Cut the pears in half, remove the core and gently toss them in the honey mixture.

2. Arrange the pears in the baking dish and pour any remaining honey mixture over the top.

Slice the butter into small pieces and sprinkle on the top of the pears.

3. Roast the pears for 20 minutes the gently turn them over and spoon some of the cooking liquid on top. Continue roasting, basting the pears occasionally until the pears are tender and golden, about 20 to 30 minutes.

4. To serve, spread a few tablespoons of the soy yogurt on a plate, place the roasted pears on top and sprinkle with some chopped nuts and muesli if desired.
