As you guys know, I love entertaining. I’m also all about balance! I try to keep a well-stocked bar and snacks around so I’m prepared for guests at any given moment. I also stick to the Keto diet which means I like to be a little more thoughtful than just chips and salsa.
I’ve recently played around with my bar cart and came up with what I’m calling the King Sal. It’s a super refreshing cocktail that mixes Don Julio Blanco, egg whites (it gives your drink that yummy frothy foam and also adds protein!), crème de cacao and salt. Don Julio is only 98 calories for every 1.5 ounce serving, which is one of the reasons that I always have it on hand. It mixes really well into any cocktail and I don’t feel guilty about it afterwards!
The King Sal is definitely not your average cocktail. The egg whites give it a thicker consistency and balance out the kick of the tequila, and the crème de cacao adds adds depth and rich flavor.
Tequila Don Julio is best enjoyed with a snack, and these Keto Fat Balls are some of my go-to’s. They’re super easy to prepare – it literally takes 15 minutes and you can keep them in the fridge to whip out when guests arrive. They’re nutritionally dense and taste a little sweet which makes them a no-brainer for quick entertainment snack solutions.
Between the King Sal and these fat balls, you’ll have yourselves some impressed and satisfied guests.
Keto Fat Balls
What you’ll need:
1.5 cups raw nuts
1 cup unsweetened shredded coconut
1/3 cup nut or seed butter of choice
1/4 cup cacao nibs optional
2 scoops Vital Proteins Marine Collagen
1/2 cup coconut oil melted and cooled
1/4 cup pure maple syrup
1 teaspoon pure vanilla extract
3 tablespoons cold water
1/2 teaspoon ground cinnamon
1/4 teaspoon sea salt
Cacao nibs, bee pollen, matcha, chia seeds (optional)
Add the raw nuts to food processor and process until finely chopped. Add the remaining ingredients to the food processor and process until a thick paste has formed. The dough should be sticky.
Roll the fat ball mixture into 16 to 20 balls. Roll in cacao nibs, bee pollen, matcha, or chia for extra flavor or crunch! Store in a ziplock bag in the refrigerator or freezer.
1 ½ oz Tequila Don Julio Blanco
2 Egg Whites
1 oz Crème de Cacao
1/4 tsp Salt
Put the egg whites in a cocktail shaker and shake until egg whites are foamy.Add Tequila Don Julio, crème de cacao and salt. Shake vigorously with ice and pour into a chilled low v glass with no stem. Sprinkle lightly with rock crystal salt and serve.
